(Fried Rice pancake )
Parboiled rice/Puzhukkalari - 2cups
Grated coconut - 1cup
Shallot - 4(chopped)
Fennel Seeds - 1tbsp
water(not too much few for grinding)
rice powder-1 or 2 tbsp(if grind mixture become too watery u can add its optional)
Wash and soak the rice overnight.Grind it along with enough water until to get a coarse mixture.(Dont add too much of water).Combine together cooked rice,coconut,shallot and fennel seeds.grind well with salt.Mix well.Add enough rice powder(if required only) and make it a smooth dough.Pour this mixture into a bowl .kept it aside.Heat oil in a pan ,not too hot just medium one.Nw take one big spoon thrw this u just take rice mixture &pour it into the hot oil ,After few minutes it will float on top and puff up.Flip it over and fry both sides until golden brown color.serve hot with spicy chicken curry.
